Lasagne

Ingredients — Red Sauce:

  • 1 diced Onion
  • 1 diced Red Pepper
  • 2 cloves Garlic
  • 1 block Smoked Tofu (cubed)
  • Pasta sheets
  • 1 tin Tomatoes
  • 200g Veggie Mince
  • 1tbsp Tomato Purée
  • 1 Stock Cube
  • fresh Basil
  • Black Pepper

Ingredients — White Sauce:

  • 2tbsp Flour
  • large knob Marg
  • ½ pint Soya milk
  • ½ block Cheezly
  • 1tsp whole grain Mustard
  • Salt
  • Pepper
  1. Fry the Onion and Garlic in Olive Oil until soft.
  2. Add the Pepper and Tofu; cook for 5-10 minutes.
  3. Add Mince, Tomatoes and Purée; simmer and add ½ pint water with stock & herbs.
  4. Melt the Marg on a low heat, sift in Flour and stir into a paste.
  5. Slowly add Soya milk, constantly stirring until smooth.
  6. Add mustard, seasoning & Cheezly.
  7. Build the lasagne and bake for 40 minutes at 180°C.
