Spaghetti bolognese

Ingredients:

  • 2tbsp Olive Oil
  • 1 large chopped Onion
  • 3 crushed cloves of Garlic
  • ½ chopped Red Pepper
  • 1 chopped medium Courgette
  • 1 can Chickpeas (drained & rinsed)
  • 225g veggie Mince / TVP
  • 800g chopped (tinned) Tomatoes
  • 1tbsp Tomato purée
  • 2 Bay leaves
  • 3tsp Basil
  • 2tsp Oregano
  1. Fry the Onion and Pepper until soft.
  2. Add Garlic, Courgette and Chickpeas. Cook for a few minutes.
  3. Add Mince & herbs. Fry for 5 minutes stirring constantly.
  4. Add Purée & chopped Tomatoes. Stir well and simmer for 10 minutes on a low heat.
  5. Server on a bed of cooked Spaghetti. 
For Chilli non-Carne:
Replace the last 3 ingredients above with:
  • 1tsp Chilli powder
  • 1tsp Paprika
  • 1tsp Cumin
  • 1tbsp Peanut butter
  • 100g Sweetcorn
  • 100g cooked Kidney beans

Serve over rice.
