Essential ingredients for experimenting: Olive oil, toasted Sesame oil, Lemon juice, Balsamic Vinegar, pesto, whole-grain Mustard, Soy sauce. For maximum health benefit use organic cold-pressed oils which help you to digest fat-soluble vitamins A, D, E & K.
Making salad dressings is not a precise art – all measurements are rough and you should try different proportions of ingredients. All the dressings below can be stored in a fridge for several days in a sealed jar or pot.
5 tbsp Olive oil, 2 tbsp Lemon juice/Balsamic Vinegar, 1 tbsp whole-grain Mustard, crushed clove of Garlic.
For general use on e.g. green leafy/tomato salads.
2 tbsp Olive oil, 3 tbsp Balsamic vinegar, 100g fresh or frozen raspberries – blend ingredients together with hand-blender.
Use on dark green/red salads e.g. Purple salad.
2 tbsp toasted Sesame oil, 1 tbsp Peanut butter 1 tsp hot Chilli sauce (or finely chopped fresh Chilli), 1 tsp Soy sauce.
For general use, especially good on rocket/peppers/beans/tofu.
