- 2 cans Chickpeas (rinsed and drained)
- 1 clove Garlic
- 5 tbsp Olive oil
- 2 tbsp Tahini
- juice of 1 Lemon
- pinch of Salt
- Sumac or Chilli powder for decoration and flavour
- Blend Chickpeas (hand blender or food processor) with all the other ingredients until smooth. You can add more oil or salted water to make runnier, or more chickpeas/tahini to make thicker.
Hummus-making is an imprecise art and there are endless variations on this basic recipe — try experimenting with pesto/curry powder/chilli/peanut butter/fresh coriander. Hummus will keep in a sealed container in the fridge for 4-5 days; goes with just about everything!
