Butternut squash & sweet potato soup

Ingredients:

  • 1 diced Onion
  • 2 cloves Garlic (crushed)
  • 1 tbsp Olive Oil
  • 1tbsp hot Curry powder
  • 300g diced Sweet potato
  • 300g Butternut squash (peeled and diced)
  • ½tsp Salt
  • 750ml Vegetable stock
  • 250ml Soya milk
  • 2tbsp Basil leaves
  1. Heat oil in a large pan. Add Onion & Garlic. Cook until soft.
  2. Add Curry powder. Cook for another minute.
  3. Add Squash and Sweet potato. Stir & cook for 2 minutes.
  4. Add Salt, Stock, Soya milk & Basil. Simmer for 20 minutes. 
  5. Liquidise & server with crusty bread.
