Moroccan tomato & chick pea soup

Ingredients:

  • 1tbsp Olive oil
  • 1 large chopped Onion
  • 1 crushed Garlic clove
  • pinch Cayenne pepper
  • pinch ground Mixed spice
  • 1tsp ground Coriander
  • 1 can of Chickpeas (drained & rinsed)
  • 850ml Vegetable stock
  • 500g Passata
  • 50g white long grain Rice
  • 1tsp Sugar
  • 1tsp Lemon juice
  1. Lightly fry the Onion & Garlic in oil for 5 minutes.
  2. Add the Spices and cook for a further 5 minutes.
  3. Add Stock, Chickpeas and Passata and simmer for 30 minutes.
  4. Add Rice; cook until soft.
  5. Add Sugar and Lemon juice (and Salt and Pepper).
