Raspberry blackout cake

  • 175g Plain Flour
  • 50g Cocoa Powder
  • 1 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda
  • ½ tsp Salt
  • 250g Sugar
  • 350g Soya milk
  • 125ml Vegetable Oil
  • 275g Raspberry Jam
  • 2 tsp Vanilla Extract
  1. Preheat the oven to 180°C.
  2. In one bowl sift the Flour, all the Powders and Salt. In another bowl blend half the Jam, Oil, Milk, Sugar and Vanilla (use a hand blender until smooth).
  3. Gradually add the dry ingredients to the wet and mix well.
  4. Pour the batter into 2 well-greased cake tines (or bun trays). Bake for 40 minutes or so.
  5. Assemble with the remaining jam and make chocolate icing for the top.
