White chocolate cranberry cookies


  • 110g Marg (melted a bit)
  • 110g Caster Sugar
  • 110g Light Muscavado Sugar
  • 1 Egg Replacer (follow instructions!)
  • 1 tsp Vanilla Essence
  • 170g Plain Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 150g Vegan White Chocolate, such as Organica brand
  • 85g sweetened Cranberries
  1. Set the oven to 190°C. Lightly grease 2 large trays.
  2. Beat the Sugar and Marge together. Add Vanilla and Egg Replacer (but not water yet!).
  3. In a separate bowl mix the Flour, Baking Powder and Salt, then add the Cranberries and chunks of Chocolate. Mix everything up!
  4. Add water (from the egg replacer instructions).
  5. Make small flat cookie shapes from the mixture, put on the trays and bake for approximately 30 minutes.
