  • 2 cans Chickpeas (rinsed and drained)
  • 1 clove Garlic
  • 5 tbsp Olive oil
  • 2 tbsp Tahini
  • juice of 1 Lemon
  • pinch of Salt
  • Sumac or Chilli powder for decoration and flavour
  1. Blend Chickpeas (hand blender or food processor) with all the other ingredients until smooth. You can add more oil or salted water to make runnier, or more chickpeas/tahini to make thicker.
Hummus-making is an imprecise art and there are endless variations on this basic recipe — try experimenting with pesto/curry powder/chilli/peanut butter/fresh coriander. Hummus will keep in a sealed container in the fridge for 4-5 days; goes with just about everything!
